Ari Pappadam - Vishu Special
A traditional Kerala sweet snack made with care and a generous hand of ghee. The kind of thing grandmothers make for festivals and grandchildren make excuses to visit for.
Ingredientsfor 6 servings
- 1 cup Raw rice (Pachari)
- 1 tsp Sesame seeds Ellu
- 1 tsp Asafoetida (Kayam)
- 2 tsp Cumin seeds (Jeerakam)
- 1 tsp Chilly powder
- Salt, to taste
Preparation
Step 1
For preparing ari pappadam - vishu special, first soak rice for few minutes.
Step 2
Grind together all the ingredients together with required salt.
Step 3
In a pappad steamer, spread the batter like small dosa and steam it for 10 minutes.
Step 4
Repeat for the rest of the batter.
Step 5
After steaming, spread the steamed pappad in a cloth and keep it under sunlight for drying till it turns crispy.
Step 6
Fry ari pappadam in oil.with porridge or rice.
Tip
Jaggery burns easily. Melt it on low heat and always strain it to remove grit before adding it to the mixture.
