Aval Payasam | Poha Kheer
This mixed, also known as Poha Kheer, is a cherished dessert in Indian households.
Ingredientsfor 10 servings
- 250 g Aval (Red rice flakes
- 11/2 litre Milk
- 1 cup Condensed milk
- 25+25 Grms Sugar
- 100 g Butter
- Little Salt
Preparation
Step 1
Dry roast the aval until crisp. Roast in low to medium flame. Do not change the colour.
Step 2
Then pour cold water into it and soak for 10 minutes.
Step 3
Mean time boil milk.
Step 4
When it starts to boil, add 25 grams of butter and Stir everything together thoroughly. Reduce the flame and keep stirring.
Step 5
Caramelize 25gms of sugar by adding 50g of butter.
Step 6
Keep the flame low and Give it a stir now and then. Whisk until the butter has melted.
Step 7
Meantime, add the soaked and drained aval into the boiling milk or payasam.
Step 8
Fold everything together gently and Let it cook for 10 minutes. Set aside.
Step 9
Meanwhile, continue with the process of caramelizing. Lower the heat a bit to keep the sugar from burning.
Step 10
Pour the caramelised sugar into the payasam.
Step 11
Add remaining Sugar and stir until they dissolve.
Step 12
Pour condensed milk and continue stirring.
Step 13
Finally add the remaining butter.
Step 14
Add little salt and mix.
Step 15
Cook the aval until it is soft. When the Payasam starts thickening turn off the heat.
Step 16
Delicious Payasam is now ready to serve.
Tip
Keep stirring throughout — the cream that forms on the sides should be scraped back in. That is where the richness comes from.
