Vettu Cake
A traditional Kerala sweet that balances richness with restraint. Made with jaggery, coconut, and a careful hand, the sweetness is warm rather than overwhelming — the kind of flavour that lingers.
Ingredientsfor 3 servings
- 2 cup Maida
- 1 cup Semolina
- 3/4 cup Sugar
- 1/2 tsp Cardamom powder
- 6 Egg
- Salt pinch
- Vegetable oil — for frying
Preparation
Step 1
Get a blender,add eggs,sugar,cardamom powder and blend it for 5 minutes.
Step 2
Mix the maida, semolina, sugar and a pinch of salt along with the beaten egg.
Step 3
Add ghee and make it into a tight dough. Set aside for 1 - 2 hours.
Step 4
Divide the dough into equal portions.
Step 5
Shape the dough roughly like a square or circle and run a sharp knife over the dough and cut ito diamond shapes.
Step 6
Fry these in the oil till they are golden brown. Drain the excess oil from Vettu Cake with a paper towel.
Step 7
Serve Vettu Cake with tea as a snack.
Tip
Ghee quality matters enormously in traditional sweets. Use homemade ghee if you can — the flavour is incomparably richer.
