Vermicelli Vegetable Upma
Morning food the Kerala way — satisfying, not heavy, and always paired with a good chutney or curry. The kind of breakfast that you look forward to the night before.
Ingredientsfor 3 servings
- 1 cup Vermicelli — roasted
- 1/2 cup Semolina
- 1 nos Carrot — chopped
- 4 nos Beans — chopped
- 1 large Tomato — chopped
- 1 nos Potato — chopped
- 1 nos Onion — chopped
- 1 nos Capsicum — chopped
- 2 nos Green chilly — sliced
- 4 nos Dry red chilly
- 1/2 tsp Mustard Seeds
- 1/4 tsp Turmeric powder
- 3 tbsp Ghee
- Curry leaves, a few
- Coriander leaves, a few
- Salt, to taste
Preparation
Step 1
Cut all the vegetables and set aside.
Step 2
Heat ghee in a kadai, add mustard seeds and allow them to sputter. Add split dry red chillies, curry leaves and onion into it. cook it, stirring for 2-3 minutes.
Step 3
Add chopped carrot, beans, tomatoes, capsicum, potato, turmeric powder, salt to taste and Stir everything together thoroughly.
Step 4
Pour one cup water and Put the lid on and cook on low heat until vegetables turn soft for around 4-5 minutes.
Step 5
Add vermicelli/semiya to it. Stir.
Step 6
Add semolina, Stir everything together thoroughly and cover it with a lid. Cook until water is absorbed. Stir in between occasionally to prevent sticking.
Step 7
Turn off the heat and transfer Vermicelli Vegetable Upma to a serving plate. Garnish with curry leaves.
Tip
Let the dish rest for a few minutes after cooking. Flavours settle and meld during this time, and the texture often improves.
