Pavakka Mezhukkupuratti | Pavakka Upperi | Kerala Style Bitter Gourd Fry
This bitter_gourd, also known as Pavakka Upperi – a Kerala style bitter gourd fry.
Ingredientsfor 4 servings
- 1 cup Pavakka/Bitter gourd — sliced
- 1 nos Onion — sliced
- 2 nos Green chillies
- Curry leaves, a few
- 1/4 tsp Turmeric powder
- 1/2 tsp Red chilly powder
- 2 tbsp Coconut oil
- 1/2 tsp Mustard seeds
- Salt, to taste
Preparation
Step 1
Warm the oil in a pan. let the mustard seeds crackle and add curry leaves.
Step 2
Add bitter gourd slices.
Step 3
Continue cooking for 7 to 8 minutes on medium heat, stirring occasionally until the bitter-gourd is completely done and slightly browned.
Step 4
Next, add sliced green chilly and onion.
Step 5
Stir fry for 8-10 minutes.
Step 6
Stir in the masalas and enough salt.
Step 7
Roast for few more minutes until the raw spice smell fades. Then turn off the heat.
Step 8
Serve alongside steamed rice.
Tip
This same method works for almost any vegetable: beans, beetroot, carrot, raw banana — swap the main vegetable and keep everything else the same.
