Pazham Madhura Vada | Banana Sweet Vada
Old-fashioned Kerala sweetmaking — no shortcuts, no substitutes. Jaggery, ghee, and coconut come together through slow cooking and patience into something far greater than the sum of their parts.
Ingredientsfor 4 servings
- 2 nos Ripe plantain Ethakaya
- 1/2 cup Coconut — grated
- 1/4 cup Melted jaggery/sugar
- 1/2 tsp Cardamom powder
- 1/2 cup Wheat flour
- 1 pinch Salt
- 1 pinch Baking soda
- Oil — for frying
Preparation
Step 1
Steam cook the banana and mash it with a fork.
Step 2
Add grated coconut and cardamom powder.
Step 3
Add melted jaggery.
Step 4
Add wheat flour, salt and baking soda.
Step 5
Knead to make a smooth dough. If the dough is too sticky, you can add little more wheat flour.
Step 6
To make vadas, dip your fingers in water. Take a small portion of this dough, make a ball, slightly flatten the ball with your thumb, next make a hole in the center.
Step 7
Pour oil into a pan and heat it and fry it.
Step 8
Fry both sides on medium heat till both sides are turned into golden brown.
Step 9
Serve while still hot with a cup of hot tea.
Tip
When working with jaggery, always melt and strain it first. Even the best quality jaggery has some grit that needs to be removed.
