Vendakka Thoran
Simple, honest, and on every Kerala lunch plate — okra thoran is coconut oil, grated coconut, and a handful of spices working quietly together. No fuss, just good food.
Ingredientsfor 3 servings
- 1/2 kg Ladies finger — chopped
- 4 nos Green chillies — slit
- 1 nos Onion — chopped
- 1 tsp Mustard
- 1 tsp Turmeric powder
- Curry leaves, a few
- 1 cup Coconut — grated
- 2 Cloves Garlic — chopped
- Salt, to taste
Preparation
Step 1
For preparing vendakka thoran, first Heat the oil in pan.
Step 2
Let the mustard seeds crackle and fry curry leaves.
Step 3
Fry onion, green chillies, turmeric and garlic.
Step 4
Add ladies finger and sprinkle salt.
Step 5
Fry for 5 minutes.
Step 6
Cover with lid and fry.
Step 7
When done, add the grated coconut and fry.
Tip
The pan should be completely dry when you finish — no moisture should remain. That dryness is what gives thoran its characteristic texture.
