Vendakka Mezhukkupuratty
A classic Kerala thoran where okra meets freshly grated coconut in a quick, dry stir-fry. Mustard seeds crackle in coconut oil, curry leaves crisp up, and the whole thing comes together in minutes.
Ingredientsfor 4 servings
- 1 cup Ladys finger — chopped
- 2 Onions — chopped
- 5 Put Green chilly
- 1 tsp Salt
- 2 tsp Coconut oil
Preparation
Step 1
Warm the oil in a kadai and add sliced onions, green chillies and cook till they become brown colour.
Step 2
Add chopped lady's finger and salt.
Step 3
Fry till the ladys finger until it is soft and tender and cooked well.
Step 4
Now lady's finger mezhukkupuratti is ready to serve.
Tip
Shred the vegetable as fine as you can — the thinner the cuts, the better the thoran. A sharp knife makes all the difference.
