Olan
A traditional Kerala Sadya dish that carries the flavours of coconut, yogurt, and carefully balanced spices. Each component of the feast has its role, and this one brings a quiet, essential balance to the banana leaf.
Ingredientsfor 4 servings
- 1/2 kg Ash gourd — cut into small pieces, kumbalanga
- 1/2 kg Pumpkin — cut into small pieces, mathan
- 100 g Beans cut in 1 inch length
- 5 nos Green chillies — slit
- Salt, to taste
- 1 cup Coconut milk
- 1 tsp Coconut oil
- Curry leaves, a few
- Water, to taste
Preparation
Step 1
For preparing olan, cook ash gourd, pumpkin, beans, green chillies and salt in water.
Step 2
When it is cooked well, add coconut milk, coconut oil and curry leaves. give it a good stir and take it off the heat.
Step 3
Olan is ready. Serve hot as a side dish with sadhiya.
Step 4
Specialties: Nadan recipe.
