Vendakka Carrot Stir Fry | South Indian Vegetarian Delight

Ingredientsfor 4 servings
- 1 nos Carrot Large — grated
- 250 g Okra/Vendakka — cut into thin pieces
- 2 tbsp Coconut oil
- 1/2 tsp Mustard seeds
- Curry leaves, a few
- 1/2 piece Onion — sliced
- 1 nos Green chilly — sliced
- Salt, to taste
- 2 tbsp Coconut — grated
- 1/4 tsp Turmeric powder
Preparation
Step 1
Cut all the ingredients and keep it ready.
Step 2
Heat 2 –3 tsp oil over medium or medium-high heat. let the mustard seeds crackle.
Step 3
Add some curry leaves.
Step 4
Add okra and Continue cooking for 3 to 4 minutes, it helps in reducing the slime in it.
Step 5
Give it a stir now and then.
Step 6
Stir in grated carrot.
Step 7
Stir everything together thoroughly.
Step 8
Add turmeric powder and salt to taste.
Step 9
Add grated coconut.
Step 10
Stir everything together thoroughly and cook for 8 – 10 minutes. Give it a stir now and then, until completely cooked.
Step 11
Goes well with rice and other side-dishes.
Tip
The final handful of curry leaves should go in right at the end, off the heat — they should crackle and crisp in the residual heat.
