Vellarikka Kichadi
A tasty and mildly spiced cucumber side dish that goes very well with hot steaming rice. With its tangy mild flavor, Vellarikka Kichadi is a cool comforting dish.
Ingredientsfor 4 servings
- 250 g Cucumber peeled, cleaned and — cut into very small pieces, vellarikka
- 5 nos Green chillies — cut into small round pieces
- 2 tbsp Coconut — grated
- 1/4 tsp Cumin seeds
- 1/4 tsp Mustard seeds
- 1 cup Curd not sour
- For seasoning
- 1 tbsp Coconut oil
- 1 tsp Mustard seeds
- 1 - Dry red chillies (Kollamulaku)
- Curry leaves, a few
Preparation
Step 1
For preparing the dish, Take a pan and cook the diced cucumber along with some water, chillies and salt. Let the water content dry up completely.
Step 2
Get a blender and grind together the grated coconut and cumin seeds to a coarse paste.
Step 3
Add crushed mustard seeds to it and Stir everything together thoroughly.
Step 4
When the cucumber is completely cooked (there should not be any amount of water left in the vessel), add the ground coconut mixture into it and Stir everything together thoroughly.
Step 5
Season the kichadi dish with mustard seeds, red chillies and curry leaves.
Step 6
Allow it to cool.
Step 7
Add curd to this mixture and Stir everything together thoroughly.
Step 8
Vellarikka Kichidi, a Side dish with rice is ready. It adds a flavor to the rice dish and within minutes you will be seen asking for more of the kichadi. Among vegetarian dishes, this particular kichadi dish stands out.
Tip
Do not rush the onion and shallot frying. The difference between pale onions and properly browned onions is the difference between a flat dish and a flavourful one.
