Veggie Pulav
A quick and satisfying egg dish that proves you do not need expensive ingredients to eat well. Boiled eggs in a spiced gravy, or scrambled with onions and curry leaves — simple Kerala cooking at its most practical.
Ingredientsfor 2 servings
- 1 cup Basmati rice
- 1 cup Mixed vegetables Carrot, Beans, Green peas
- 1 Stick Cinnamon (Karugapatta)
- 5 nos Cloves (Grambu)
- 2 nos Bay leaves Vazhana ela (Karuga)
- 3 nos Cardamom (Elakka)
- 10 nos Black pepper
- 1/2 tsp Garam masala powder
- Salt, to taste
- 4 tbsp Ghee
- 2 cup Water
Preparation
Step 1
Heat ghee in a pan.
Step 2
Add the spices and simmer the flame.
Step 3
When aroma comes, add the vegetables and rice and fry for 2 - 3 minutes.
Step 4
Add salt and garam masala powder.
Step 5
Add water and allow it to boil on a high flame.
Step 6
Simmer the flame again.
Step 7
Cover the vessel with a lid and cook for about 15 - 20 minutes.
Tip
Hard-boil the eggs first, then make shallow cuts on the surface before adding them to the gravy — this lets the masala flavour penetrate inside.
