Vegetarian Vendaykka Stew
Side dish for rice or chappathi - Vegetarian Vendaykka Stew.
Ingredientsfor 6 servings
- Ladies finger : 1 bowl
- Onion : 2 nos
- Mustard : 2 tsp
- Garlic : 2 cloves
- Ginger : 1 inch piece
- Coconut milk : 1 bowl
- Dried red chilly : 2 nos
- Green chilly : 1 no
- Curry leaves : 1 spring
Preparation
Step 1
Heat a pan add oil in it and when it hot add onion, ginger, garlic, green chilly.
Step 2
Add salt to it and give it a good stir and then add ladies finger to it.
Step 3
Add little water and chilly powder to it.
Step 4
Close the pan and let it cooked.
Step 5
To this add coconut milk.
Step 6
When it gets boiled off the flame.
Step 7
Heat another pan add oil in it and add mustard to it when it boils.
Step 8
When it allow to crackles add dried red chilly, shallot and curry leaves.
Step 9
Cook it, stirring for 2 minutes and then off the flame.
Step 10
Pour this to the stew.
Step 11
Give it a good stir.
Step 12
Transfer to the serving dish.
Tip
Let the dish rest for a few minutes after cooking. Flavours settle and meld during this time, and the texture often improves.
