Vegetarian Curry
A deeply satisfying vegetarian curry simmered slowly with freshly ground spices and coconut. The kind of gravy that thickens as it rests and rewards patience with layered, rounded flavour.
Ingredientsfor 2 servings
- 1 nos Potato
- 1 nos Onion — chopped
- 1 nos Banana flower small — grated
- Ginger — chopped
- Pepper, to taste
- Oil, to taste
- Coconut milk, to taste
- Salt, to taste
- Turmeric powder A pinch
- 1 tsp Coriander powder
- 1 tsp Chilly powder
Preparation
Step 1
First Heat the oil in a pan and cook onion and ginger. Add pepper, turmeric and Stir everything together thoroughly.
Step 2
Boil the potato and cut into pieces.
Step 3
Add these potatoes and grated banana flower to above onion mix. 4)Add coriander powder and chilly powder.
Step 4
Add some water and allow the mixture to boil.
Step 5
Add coconut milk to it and required salt.
Step 6
Cook in low heat until done.
Tip
Let the curry rest for at least 15 minutes after cooking — the flavours deepen as it sits. Reheated curry almost always tastes better than fresh.
