Vegetable Uppumavu
A traditional preparation from Kerala that balances flavour, texture, and aroma in the way that only home cooking can. No two households make it exactly the same, and that is the point.
Ingredientsfor 4 servings
- Semolina (rava) : 1 cup
- Carrot : ½ piece
- Beetroot : ¼ piece
- Onion : ½ no
- Tomato : ½ no
- Shallot : 4 nos
- Garlic : 1 no
- Ginger : 1 inch piece
- Green chilly : 1 no
- Water : 2 cups
- Mustard : 2 tsp
- Oil : 1 tsp
- Salt, to taste
Preparation
Step 1
Heat a pan and put oil in it when it gets hot add mustard.
Step 2
When it allow to crackles add the onion, shallot, ginger, garlic, tomato, green chilly, curry leaves in it.
Step 3
When the matter gets brown add the vegetables in to it and wait till it gets half cooked.
Step 4
Add 2 cup of water and let it boil.
Step 5
When it gets boiled add rava or semolina in to it by stirring continuously.
Step 6
Enter Step.
Step 7
When it gets boil off the flame and close the pan.
Step 8
After 2 minutes open the pan and mix it well.
Step 9
Transfer to the serving dish.
Tip
Coconut oil is the default cooking fat in Kerala kitchens. It adds a depth of flavour that other oils simply cannot match in these recipes.
