Vegetable Soup Yummy
A light, warming broth seasoned with black pepper and curry leaves. This is not the kind of soup that tries to be a meal — it is the kind that settles the stomach, clears the head, and warms you from the inside.
Ingredientsfor 4 servings
- 1 nos Carrot — grated
- 1 cup Cabbage — chopped
- 1/4 cup Corn
- 1/4 cup Beans — chopped
- 1/2 cup Cauliflower
- 1/2 cup Mushrooms — chopped
- 1 nos Potato — grated
- 1 nos Tomato chopped, small size
- 1/2 tsp Garam masala
- 2 tbsp Olive oil/Butter
- 1 nos Onion — chopped
- 2 tbsp Garlic — chopped
- Salt, to taste
- 2 tbsp Pepper powder
- 5 cup Water
- 1 cup Cooked Noodles — optional
- Fresh cream — optional
Preparation
Step 1
Heat olive oil / butter in a pan.
Step 2
Add chopped onion, garlic and all the vegetables along with salt and garam masala and Let it cook for 2 minutes.
Step 3
Get one portion of these vegetables and make it into a fine paste in a mixer.
Step 4
Keep this paste aside.
Step 5
Add 5 cups of water to the remaining vegetables in the pan and boil till the vegetables are cooked well.
Step 6
Add the vegetable paste into this soup and Stir everything together thoroughly.
Step 7
Remove from fire, sprinkle pepper powder and serve hot with brown bread or toast.
Step 8
While serving, you can add some cooked noodles or little fresh cream. It is up to your taste and creativity.
Step 9
Tips :- You can add more vegetables of your choice. To make the soup rich, u can garnish it with grated cheese.
Step 10
Instead of garam masala, you can use maggi chicken / prawn / vegetable cubes or you can use chicken / beef / seafood stock.
Tip
Do not rush the onion and shallot frying. The difference between pale onions and properly browned onions is the difference between a flat dish and a flavourful one.
