Vegetable Pulau
Straightforward Kerala cooking — good ingredients treated well, spiced with confidence, and served without pretence. The kind of food that tastes like someone's kitchen, not a restaurant.
Ingredientsfor 2 servings
- Cooked vegetables : 1 ½ cup
- Onion : 2 nos — chopped
- Tomato : 2 nos
- Rice : 2 cup
- Oil : 4 tsp
Preparation
Step 1
In a deep pan, take oil and cook the chopped onions until it starts browning.
Step 2
Add cooked vegetables (I used green peas, potato and carrot. You can add vegetables of your choice ).
Step 3
Stir everything together thoroughly and cook for a couple more minutes. Add chopped tomatoes and rice.
Step 4
Stir continuously for two minutes and add water.
Step 5
Close the lid and cook in a low flame until the rice is done.
Step 6
Serve while still hot.
Tip
Let the dish rest for a few minutes after cooking. Flavours settle and meld during this time, and the texture often improves.
