Vazhuthananga Brinjal Fry
A tasty favorite that can be prepared in a jiffy. The soft and spicy favorite goes well with hot rice. unique and with brinjal rounds marinated in a ground spicy mixture and deep fried to a brown color.
Ingredientsfor 4 servings
- 2 nos Brinjal sliced into rounds or elongated very thin pieces, medium
- 1 tsp Ginger paste
- 1 tsp Garlic paste
- 1/4 tsp Pepper powder
- 1/4 tsp Chilly powder
- 1 tsp Chicken masala Eastern brand
- Salt, to taste
Preparation
Step 1
For preparing Vazhuthananga Brinjal Fry, mix together all the ingredients together except brinjal. You can also add all the ingredients in a mixer and spin a few times adding 1 tbsp water. Mixing with hand is perfectly alright as well.
Step 2
Next, marinate the brinjal for 1 hour in this masala. Keep the mixer bowl/container used for marination slanted, as the brinjal keeps giving out water and we need to drain off this water before frying. Check for salt when you take to fry and add more if required.
Step 3
In a nonstick pan, add 2 tbsp sunflower oil & heat. In a small flame, add the brinjal pieces as much as can be contained in the pan. Fry uncovered for 3 minutes on each side. Once done transfer to a serving dish.
Step 4
Repeat with the remaining brinjal pieces if any.
Step 5
Serve while still hot with rice with lots of love.
Tip
Marinate for at least 30 minutes if you can — the spices penetrate deeper and the chicken stays juicier.
