Vazhakka (raw Banana) Ularthiyathu
Kerala-style dry fry where banana is cooked down until all the moisture evaporates and what remains is intensely flavoured, slightly caramelised, and impossibly moreish. Best with parotta or plain rice.
Ingredientsfor 6 servings
- 1/2 kg Raw banana — chopped
- 2 tsp Chilli flakes
- 1 tsp Salt
- 6 Curry leaves
- 5 Garlic
- 1 tsp Mustard
Preparation
Step 1
Cut raw banana into small pieces.
Step 2
Cook raw banana with 1l2 cup water.
Step 3
Heat oil and add mustard seeds.When mustard allow to crackles add garlic and onion, stir for 2 minutes.
Step 4
Add cooked raw banana to this add salt and curry leaves to this. Stir for 2 minutes until water gets fully dries up.
Step 5
Now vazhakka ularthiyathu is ready to serve with hot rice.
Tip
A heavy-bottomed pan or cast iron skillet gives you the best results for a proper Kerala fry. Thin pans burn the spices before the meat dries.
