Vazhakka Mezhukkupuratti
A classic Kerala thoran where mixed meets freshly grated coconut in a quick, dry stir-fry. Mustard seeds crackle in coconut oil, curry leaves crisp up, and the whole thing comes together in minutes.
Ingredientsfor 4 servings
- 1 cup Vazhakka
- 2 Onion
- 4 Green chilli
- 1 tsp Mustard
- 2 Red chilli
- 1 tsp Oil
Preparation
Step 1
Heat the oil in kadai add mustard.When mustard allow to crackles add red chilli, onion and green chilly Let it cook for 2 minutes.
Step 2
Add chopped raw banana or vazhakka to this and cook for a minute.
Step 3
Next add turmeric powder,salt and add 1 cup of water.
Step 4
Next cover and bring to boil,Let it cook for 5 minutes.
Step 5
When the pieces turn soft uncover and keep on fire until water evaporates completely.
Step 6
Now vazhakka mezhukkupuratty is ready to serve.We can serve with rice and curd.
Tip
Shred the vegetable as fine as you can — the thinner the cuts, the better the thoran. A sharp knife makes all the difference.
