Vazhakka Bajji | Raw Banana Bajji | Kaya Bajji
Deep-fried until the outside shatters at the first bite and the inside stays soft and flavourful. A tea-time favourite across Kerala, especially when the monsoon rain is hammering the roof.
Ingredientsfor 4 servings
- 2 nos Raw banana thinly sliced length wise
- 2 cup Gram flour Kadala mavu
- 1/2 cup Rice flour
- 1 tsp Baking soda
- 1 tsp Chilly powder
- Salt, to taste
- Water, to taste
- Oil — for deep frying
Preparation

For preparing Vazhakka Bajji.

Raw Banana Bajji.
Step 3
Kaya Bajji, first mix together all stated ingredients: gram flour, rice flour, baking soda, chilly powder and required salt in a bowl by adding sufficient water to form a thick batter. It should not be watery kind of batter.
Step 4
Get the thinly sliced raw banana, dip into the batter and fry in hot oil in hot boiling oil. Keep note that the raw bananas should be thinly sliced and not thick, otherwise it will not be properly cooked.
Step 5
Remove the fried bajji from oil when it turns dark in color.
Step 6
Serve the delicious Bajji hot with mint chutney or coconut chutney. This is a popular snack with street side vendors. This is an economical snack and very healthy too.the healthy snack with your loved ones and family.
Tip
Do not overcrowd the pan — fry in small batches to maintain the oil temperature. Crowding drops the heat and gives you greasy results.
