Vattayappam Easy
Vattayappam is a special dish of Kerala. It is something like a pancake usually prepared with finely ground or powdered rice flour.
Ingredientsfor 6 servings
- 11/2 cup Rice flour
- 11/2 cup Coconut milk thick
- 1/3 cup Sugar sweet as desired
- 1 tsp Cardamom powder podi (Elakka)
- 1/4 cup Cashew & raisins I added only cashews
- 1 tsp Yeast
- Salt A pinch
- Water, to taste
Preparation
Step 1
Prepare the thick coconut milk(I have used the maggi milk powder) using hot water.
Step 2
Mix the rice flour slowly into it and make a thick batter. Add this into the blender to make it a smooth paste.
Step 3
Drop in the sugar, salt and cardamom powder.
Step 4
Mix the yeast in lukewarm water (about 20 ml) and add to the batter.
Step 5
Ferment for about 4-5 hours. give it a good stir and check the salt and sugar, adjust if required. Add the half of cashews & raisins mentioned.
Step 6
Grease a plate or the idli moulds with butter or ghee. Pour the batter into it.
Step 7
Steam in a steamer or idli cooker for 15 minutes on medium heat.
Step 8
Open the lid. You can see the cake puffed up. Add the remaining cashews on top and steam for another 5 minutes.
Step 9
Take it off the heat. and let it cool down. Cut into pieces.
Step 10
Serve as breakfast or as snack.
Tip
The swirling motion takes practice. Your first two appams will likely be imperfect — consider them warm-up rounds.
