Vattayappam
A typical Kerala sweet dish. one of the and healthiest tea time snack without oil. very soft and fluffy.
Ingredientsfor 4 servings
- 2 cup White rice soak for 4-5 hours (pachari)
- 1 cup Coconut — grated
- Cooked rice A handful
- 1/2 tsp Instant yeast
- 4-5 tbsp Sugar
- 4 Cardamom
- Water, to taste
- Ghee for grease
- Salt, to taste
- Cashews /Raisins — for garnishing
Preparation
Step 1
Grind the soaked rice with coconut, rice, instant yeast, salt, sugar and cardamom along with required water.The batter should be thick and set aside for 3 - 4 hours.
Step 2
Apply a little ghee in a cake tin and pour the batter into it.Put some raisins, cashews on the top.Steam it for 15 -20 minutes.
Step 3
Vattayappam is ready. Serve hot with tea or coffee.
Tip
A well-seasoned appachatti is worth the investment. The appam should release from the pan without any resistance.
