Varutha Ulli Chammanthi Podi (Fried Onion Chutney Powder)
Varutha Ulli Chammanthi Podi is an unique recipe from the state of Kerala. This is the best side dish ith boiled rice. This spicy dish is prepared with onions and other masalas and spices.
Ingredientsfor 3 servings
- ½ cup Shallots/Onions — sliced
- 4 nos Red Chillies
- 3 Tspns Coconut Oil/Ghee
- Salt, to taste
Preparation
Step 1
Heat the Coconut Oil/Ghee in a frying pan/Cheenachatty and add the Shallots/Onion slices and Red Chillies (if necessary, cut the Red Chillies into pieces) into the hot oil/ghee and stir the mix.
Step 2
After about five minutes add Salt also into this mix and stir the mix further.
Step 3
When the colour of the mix turns into golden/brown, turn off the heat and allow to cool the mix for some time (if the mix is fried more, the powder will give a bitter taste).
Step 4
Then smash the fried Shallots/Onion, Red Chillies and Salt mix with fingers or smasher.
Step 5
Varutha Ulli Chammanthi Podi (fried Shallots/Onion Chutney Powder) is ready. This will be a very Side dish to serve with cooked Rice, because this powder can mix with the cooked rice and eat directly. Since this is a very economically viable and less preparation time required recipe, generally some people will not require any other side dish than this Ulli Chammanthi Podi.
Tip
Coconut oil is the default cooking fat in Kerala kitchens. It adds a depth of flavour that other oils simply cannot match in these recipes.
