Varutha Matthi
The smell of mixed cooking in coconut oil with curry leaves is the smell of every fishing village kitchen in Kerala. Quick to cook, deeply satisfying, and always served with hot rice.
Ingredientsfor 5 servings
- 3 Times) Matthi / Sardine : 500 gm(clean it well and wash 2 clean it well and wash 2
- Oinion : 1 no(Make a paste onion grinding with salt and keep it aside
- Turmeric powder : 1 tsp
- Pepper powder : 3 tsp
- Red chilli powder : 1 tsp
- Salt, to taste
- Coconut / Refined oil : as reqd ( to fry the Matthi
Preparation
Step 1
Add the onion paste and salt into the cleaned sardine.
Step 2
To avoid sticking of sardine in the pan while frying, add some lemon juice into the mix.
Step 3
Add red chilli powder, pepper powder and turmeric powder with the sardine pieces, mix it well and set aside for some time.

Heat some oil in a frying pan and put the sardine pieces in it and fry both sides.

Varutha Matthi is ready and can be served with cooked rice.
Tip
Never stir a fish curry with a spoon. Shake the pot gently to coat the pieces — stirring breaks them apart.
