Variety Fish Fry(Meen)
Slow-roasted in coconut oil with a generous hand of spices, this fish fry develops layers of flavour as it dries out on the pan. The patience pays off — every piece is coated and concentrated.
Ingredientsfor 4 servings
- 1 kg Pomfret fish
- 5 Cloves Garlic
- 1 tsp Cumin seeds
- 1 tsp Pepper corns
- 4 nos Dry red chillies
- 1 tbsp Fish masala Eastern
- 5 nos Shallots (kunjulli)
- Salt, to taste
Preparation
Step 1
For preparing variety fish fry, first clean and make slits on fish pieces.
Step 2
Grind together all the ingredients and marinate the fish pieces in it for half an hour.
Step 3
Fry in hot oil the fish pieces in a pan.
Step 4
A And variety fish fry is ready.
Tip
The final handful of curry leaves should go in right at the end, off the heat — they should crackle and crisp in the residual heat.
