Vanpayar Mezhukkupuratti
A classic Kerala thoran where mixed meets freshly grated coconut in a quick, dry stir-fry. Mustard seeds crackle in coconut oil, curry leaves crisp up, and the whole thing comes together in minutes.
Ingredientsfor 6 servings
- 1 cup Cow peas vanpayar
- 1 cup Onion — chopped
- 3 Dry red chilli
- 8 Curry leaves
- 1 tsp Salt
Preparation
Step 1
For preparing the delicious and healthy dish, first cook cow peas in a cooker.
Step 2
When cowpeas is cooked, set aside.
Step 3
Heat a kadai and add 1 spoon oil. Add mustard seeds and when the mustard seeds start crackling, we can add onions, red chilly and curry leaves.
Step 4
Mix all together, add salt and stir for 2 minutes.
Step 5
Now the delicious stir fry is ready to serve.
Tip
Shred the vegetable as fine as you can — the thinner the cuts, the better the thoran. A sharp knife makes all the difference.
