Valam Puli Achar | Kerala Tamarind Pickle
Valam Puli Achar | Kerala Tamarind pickle is a sweet,sour and hot pickle prepared by mixing melted jaggery and tamarind with some spices.
Ingredientsfor 20 servings
- 500 g Tamarind
- 1 tbsp Chilly powder
- 200 g Jaggery
- 1 tbsp Pepper powder
- Salt, to taste
- 1/4 cup Water
Preparation
Step 1
Remove the brown skin of tamarind.
Step 2
Mix all the dry ingredients.
Step 3
Coat each tamarind in this dried masala mix.
Step 4
Transfer it into a glass bottle.
Step 5
Melt jaggery in water and let it cool.pour it over the spiced tamarind and Stir everything together thoroughly.
Step 6
It is ready.
Tip
Mustard oil needs to be heated to smoking point and then cooled before adding to the pickle. This removes its pungent raw flavour.
