Uzhunnu(Urad Dal) Appam
Lacy edges, spongy centre — appam is fermented rice batter swirled in a curved pan until it forms a bowl-shaped pancake. The slight tang from fermentation pairs perfectly with a coconut stew or egg curry.
Ingredientsfor 4 servings
- 1/4 glass Urad dal parippu (Uzhunnu)
- 1 glass Raw rice (pachari)
- 1 glass Flattened rice flakes aval
- Baking powder A pinch
- Sugar, to taste
- Oil, to taste
- Salt, to taste
- 25 g Fenugreek seeds (Uluva)
Preparation
Step 1
For preparing uzhunnu appam, soak uzhunnu, raw rice, aval & fenugreek seeds in water. Grind them well.
Step 2
Add baking powder, sugar and salt to it.
Step 3
Keep the batter for 3 hours.
Step 4
Pour 2 tbsp of batter in unniyappam pan & cook it.
Tip
The swirling motion takes practice. Your first two appams will likely be imperfect — consider them warm-up rounds.
