Uppuma
A traditional preparation from Kerala that balances flavour, texture, and aroma in the way that only home cooking can. No two households make it exactly the same, and that is the point.
Ingredientsfor 4 servings
- 2 cup Semolina Rava/Sooji
- 3-4 tbsp Oil/Butter
- Mustard seeds A pinch
- 2 tsp Red gram (Thuvaraparippu)
- 1 nos Onion — chopped
- 2-3 nos Green chillies — chopped
- Cashewnuts A, a few
- Groundnuts A few, Nelakadala
- Raisins A few, Onakka munthiri
- 3 cup Water
- Salt, to taste
- Coriander leaves for flavour — chopped
Preparation
Step 1
Preheat frying pan (kadai/cheena chutty).
Step 2
Fry rava for 5 minutes and set aside.
Step 3
Heat oil or butter in it, add mustard seeds and allow them to allow to crackle.
Step 4
Add red gram, onions, green chillies, cashewnuts, groundnuts and raisins and fry them well.
Step 5
Add salt.
Step 6
Pour water and allow it to boil.
Step 7
Add coriander leaves.
Step 8
Add rava slowly while stirring continuously.
Step 9
Cook for another 4 - 5 minutes. Serve hot.
Tip
Good shallots are the backbone of Kerala cooking. They should be small, pink-purple, and strong-smelling. Large onions can substitute, but the flavour will be different.
