Unniyappam Cake | 10 Min Soft Sponge Vanilla Cake In Appe Pan
A Kerala breakfast classic with its characteristic soft, fluffy middle and paper-thin, crispy edges. The fermented batter gives it a gentle sourness that balances rich curries.
Ingredientsfor 4 servings
- 2 nos. Eggs
- 1 tsp Vanilla essence
- 3/4 cup Sugar
- 1 cup Maida
- 1 pinch Salt
- 1/4 cup Sunflower oil
- Oil
- 1 tsp Baking powder
- 1/4 cup Milk
Preparation
Step 1
Get a blender and add sugar, eggs and vanilla essence. Blend it for 1 minute.
Step 2
Get a bowl and add maida, baking powder and a pinch of salt. Sift and mix it very well. Pour egg mixture and sunflower oil.
Step 3
Mix it well with a spoon.
Step 4
B rush some oil on Appe Pan, pour 1.5 tsp batter in each. Put the lid on and cook in low heat for 5-7 minutes.
Step 5
Flip and cook for few seconds and remove it.
Step 6
Soft and spongy vanilla cake is ready.
Tip
The fermented batter is the heart of good appam. Give it at least 8 hours to rise — overnight is best. The slight sourness is what makes appam special.
