Unniappam Kerala Style
A snack prepared from rice and bananas. The cardamom flavored snack is very flavorful and appealing. Unniappam is unique and special with rice banana mixture poured into an appam pan and deep fried to a golden brown color.
Ingredientsfor 4 servings
- 1 cup Raw rice
- 1 cup Jaggery
- Dry coconut A few pieces
- 2 tbsp Ghee
- 1 pinch Cardamom powder (Elakka)
- 1 pinch Baking powder
- 2 nos Ripe bananas
- Oil, to taste
Preparation
Step 1
For preparing Unniappam Kerala Style, soak raw rice in water for 2 to 4 hrs.
Step 2
Drain it well and grind it in a mixer adding very little water, baking soda and banana.
Step 3
When it becomes a fine paste, add the jaggery to it and grind.
Step 4
Chop the dry coconut into small bits and fry it in ghee till golden brown.
Step 5
Add the coconut bits and cardamom powder to rice and jaggery batter.
Step 6
The consistency of the batter should be like the dosa batter.
Step 7
Heat the appam pan and add little oil to all the potions of the pan, so it's half full.
Step 8
Add the batter to each portion of the pan with a small table spoon.
Step 9
Turn over and cook till the Unniappams are golden brown on both sides.
Step 10
Cook the unniappam with ghee also. Kids will love it.
Tip
The fermented batter is the heart of good appam. Give it at least 8 hours to rise — overnight is best. The slight sourness is what makes appam special.
