Unnakka Meen Roast
Kerala-style dry fry where fish is cooked down until all the moisture evaporates and what remains is intensely flavoured, slightly caramelised, and impossibly moreish. Best with parotta or plain rice.
Ingredientsfor 2 servings
- Unnakka meen 2 or 3 piece
- Mustard 1 tsp
- Onion 1
- Ginger 1 inch piece
- Garlic 2 cloves
- Green chilly 3
- Tomato half or one
- Turmeric powder 1 tsp
- Chilly powder 2 btsp
- Coriander powder 1 tsp
- Salt add if needed
- Oil, to taste
Preparation
Step 1
Get unnaka meen.
Step 2
Grind it using a mixer.
Step 3
Heat a a pan add oil in it and put mustard when it allow to crackles.
Step 4
Green chilly and cook it, stirring well.
Step 5
Next, add all powders and sauté.
Step 6
Then pour the grinded fish to it.
Step 7
Give it a good stir.
Step 8
Pour little water and close it for 5 mint.
Step 9
Next, add the dried chilly to it and close again for 5 mint.
Step 10
When it becomes a roasted state off the flame.
Step 11
Transfer to the serving dish.
Tip
A heavy-bottomed pan or cast iron skillet gives you the best results for a proper Kerala fry. Thin pans burn the spices before the meat dries.
