Ularthiya Beef-Mattirachi
Beef cooked the Kerala way — with patience, a heavy hand of spices, and enough coconut oil to make the purists happy. The meat is slow-cooked until it is tender enough to fall apart, then finished with intensity.
Ingredientsfor 4 servings
- 1/2 kg Beef chopped, Mattirachi
- 2 tbsp Curd
- Salt, to taste
- 3 tsp Beef masala powder
- 2 nos Onion sliced and — ground
- 2 tbsp Ginger — chopped
- 2 tbsp Garlic — chopped
- 2 tsp Oil
- 1 tsp Mustard seeds
- 1 tbsp Garlic — chopped
- 3 nos Dry red chillies
- 1/2 tsp Pepper powder
- 1 sprig Curry leaves
Preparation
Step 1
For preparing ularthiya mattirachi, first marinate beef with curd and salt for 30 minutes.
Step 2
Heat the oil in a pressure cooker, fry half of the ground onion, 1 tbsp garlic, 1 tbsp ginger and beef masala powder. Add the beef pieces and pressure cook it until done.
Step 3
Heat the oil in kadai, let the mustard seeds crackle, add red chillies and curry leaves. Fry the remaining half of ground onion, garlic and ginger.
Step 4
Add pepper powder and sprinkle salt.
Step 5
Add the cooked beef to it. Make it a semi thick gravy.
Step 6
Ularthiya mattirachi, a keralite recipe is ready.
Tip
Thin strips cook faster and develop more crispy surface area than thick cubes. Cut against the grain for tenderness.
