Tuna Rolls
Fresh fish cooked the Kerala way — with coconut, curry leaves, and a tartness that comes from kudampuli or tamarind. Coastal Kerala cooking at its simplest and best.
Ingredientsfor 6 servings
- 1 nos Pastry sheet size 40 cm x 25 cm) or 35 cm di
- 300 g Tuna fish tinned, with tomato sauce
- 1/2 nos Carrot — grated
- 1 nos Onion finely chopped, medium
- 1/2 inch Ginger — chopped
- 2 nos Green chillies — chopped
- 1 tsp Coriander powder
- 1/2 tsp Chilly powder
- 1/2 tsp Turmeric powder
- 1 tsp Garam masala powder powder 2 cloves, 1 cinnamon, and 3 cardamon and a few perumjeerakam
- Coriander leaves A, a few
- Salt, to taste
- Oil, to taste
Preparation
Step 1
Heat a little oil in a thick bottom pan or a non stick pan.
Step 2
Add onion, ginger, curry leaves, green chilly and cook them.
Step 3
When it is done, add coriander powder, masala powder, turmeric, chilly powder and salt & stir it well.
Step 4
Add tuna along with the tomato sauce in it and grated carrot and stir it well to avoid lumps and heat it till all water is gone.
Step 5
Check the salt and add more, if needed.
Step 6
Add coriander leaves and stir.
Step 7
Remove from fire and set aside to cool.
Step 8
Spread pastry sheet on a flat surface and keep the tuna mix as a line on one side after leaving 1 cm on one side.
Step 9
Roll the pastry sheet once just to cover the tuna mix.
Step 10
Add another line of tuna masala mix near to the roll as a line of 1 cm width and roll it again to cover the second layer of tuna mix.
Step 11
Continue putting tuna mix and rolling the pastry sheet till the whole pastry sheet is rolled as a cylinder.
Step 12
Roll it tightly from the begining so that you get a smooth thin cylinder.
Step 13
Cut it into small pieces of 1 cm width.
Step 14
Shape it into good circles by hand.
Step 15
Butter a baking tray or spread butter paper on the tray and arrange the rolls on it by keeping some space in between.
Step 16
Usually each roll will expand bit when it is well cooked.
Step 17
Bake it at 180ªC for about 30 minutes or till it is done.
Step 18
Serve while still hot as a starter for party or as an evening snack.
Step 19
If you use double grill oven, try to bake it with both grills on for about 10 minutes and then cover it with aluminium foil and bake it for about 20 minutes with the lower grill alone.
Step 20
If you don`t get tuna with tomato sauce, use cooked tuna or tinned tuna after removing the salt water. Add 2 chopped tomatoes to the onion masala mixture and stir it at low heat till all the water is gone and then add tuna and follow the recipe as given above.
Tip
A clay pot gives fish curry a distinctive taste that metal pans cannot replicate. If you have a manchatti, use it.
