Traditional Sambhar - Common Dish For Kerala Sadhya
A traditional preparation from Kerala that balances flavour, texture, and aroma in the way that only home cooking can. No two households make it exactly the same, and that is the point.
Ingredientsfor 5 servings
- Vegetables : 1 cup or, to taste
- Sambhar powder : 3 tsp
- Tamarind, to taste
- Curry leaves : 2 spring
- Chilly powder : 2 tsp
- Green chilly : 2 nos
- Asafoetida powder : 1 tsp
- Coriander powder : 2 tsp
- Shallots : 10 nos
- Coriander leaves : 2 springs
- Lentils : ½ cup
- Mustard : 1 tsp
- Dried red chilly : 2 nos
- Yellow mustard : ½ tsp
- Oil, to taste
- Salt, to taste
Preparation
Step 1
Soak the lentils in water for 3 hours and then cook it first using little salt.
Step 2
When lentils gets cooked add the vegetables and shallot to it.
Step 3
Give it a good stir and add salt and water if needed.
Step 4
Then close it and wait until it gets cooked.
Step 5
When it gets cooked add coriander leaves and tamarind to it and let it boil.
Step 6
Add chilly powder, sambhar powder and coriander powder to it.
Step 7
Give it a good stir and then close it and off the flame.
Step 8
Heat a pan add oil in it and when its hot add mustard and yellow mustard to it.
Step 9
When it allow to crackles add dried red chilly, asafoetida powder,curry leaves and green chilly.
Step 10
Give it a good stir and then pour this matter to the sambhar.
Step 11
Then give it a good stir and transfer to the serving dish.
Tip
Let the dish rest for a few minutes after cooking. Flavours settle and meld during this time, and the texture often improves.
