Traditional Kerala Carrot Beans Thoran

Ingredientsfor 4 servings
- 1/2 cup Carrot — grated
- 1/2 cup Beans
- 1 tsp Mustard
- 1 tsp Oil
- 1/2 cup Coconut — grated
- 1 tsp Salt
- 1 tsp Cumin seeds
- 1 Onion
- 5 Curry leaf
- 2 Red chilly
- 1 cup Water
Preparation
Step 1
Set a kadai over medium heat and pour in the oil add mustard.When mustard allow to crackles add red chilly and curry leaf Let it cook for 2 minutes.
Step 2
Add chopped beans to this and stir for 2 minutes.
Step 3
Add grated carrot and salt to this and Let it cook for 3 minutes on low heat.
Step 4
Grind coconut,onion,cumin seeds and chilli powder in a mixer.
Step 5
Add this ground mix to carrot beans mix and mix all together for 2 minutes in low flame.
Step 6
Add 1 cup of water to this and let it bubble for 5 minutes until it is cooked well.
Step 7
Sir for 2 more minutes until full water dries up.
Step 8
Now carrot beans thoran is ready to serve with hot rice.
Tip
Shred the vegetable as fine as you can — the thinner the cuts, the better the thoran. A sharp knife makes all the difference.
