Traditional Kaalan Recipe Made Using Curd
A home-style Kerala dish made with care and the kind of spice knowledge that comes from watching someone else cook it a hundred times. Each step matters, and the result is worth the effort.
Ingredientsfor 6 servings
- Vegetables : 1 cup ( usually we use banana
- Curd : ½ cup
- Coconut : ½ cup
- Cumin seeds : tsp
- Green chilly : 3 nos
- Curry leaves : 1 spring
- Mustard :2 tsp
- Dried red chilly : 5 nos
- Chilly powder : 1 tsp
- Turmeric powder : 1 tsp
- Salt, to taste
Preparation
Step 1
Cook the vegetable using little water chilly powder and salt.

Grind the coconut, cumin seeds and green chilly.
Step 4
When it gets cooked add curd to it and stir continuously.
Step 5
To this add the grinded mixture of coconut.
Step 6
Stir it well and off the flame.
Step 7
Heat a pan add oil to it and when its hot add mustard and when it allow to crackles add dried red chilly and curry leaves to it,cook it, stirring well.
Step 8
Pour this matter to the mixture.
Step 9
Give it a good stir.
Tip
Let the dish rest for a few minutes after cooking. Flavours settle and meld during this time, and the texture often improves.
