Tomato Rice | Tomato Rice In Pressure Cooker | Thakkali Sadam
Unlock the secrets behind the beloved South Indian classic Tomato Rice, that combines the goodness of rice with the vibrant flavors of tomatoes.
Ingredientsfor 3 servings
- 2 cup Basmati rice Soaked and — drained
- 3 nos Ripe tomato Medium
- 1 nos Onion Small(thinly sliced
- 1 tsp Ginger garlic paste
- 1 nos Green chilly — chopped
- 4 tbsp Ghee
- 1/4 tsp Turmeric powder
- 31/2 cup Hot Water
- Coriander leaves Few — chopped
- Salt, to taste
- 3 nos Cardamom (Elakka)
- 3 nos Cloves (Grambu)
- Cinnamon A few pieces (Karugapatta)
- Raisins, as needed
- Cashewnuts, to taste
Preparation
Step 1
Blend the tomatoes in a mixer grinder to make a puree. Set aside.
Step 2
Heat 2 - 3 tbsp of ghee in a pressure cooker.
Step 3
Add onion and cook well. Stir in chopped green chilly, ginger garlic paste, turmeric powder and stir.
Step 4
Add all the spices specified in the 'spices section' and fry for a few seconds in low flame.
Step 5
Add the tomato puree and give it a good stir.
Step 6
Stir, till the puree starts to thicken.
Step 7
Do not reduce it too much.
Step 8
Add the drained rice and Stir everything together thoroughly.
Step 9
Add 3 1/2 cups of water and Stir everything together thoroughly again.
Step 10
Add required salt and Stir everything together thoroughly.
Step 11
Close the cooker with its lid and pressure cook upto 2 whistles on high heat.
Step 12
Fry the raisins and cashews in the remaining tbsp of ghee.
Step 13
After opening the cooker, add the above fried items along with the chopped coriander leaves.
Step 14
Mix everything well.
Step 15
Goes well with any curry or salad and pappadom.
Step 16
If you wish, you can add vegetables like green peas, beans, carrot and cauliflower along with the rice. Then, you need to add 4 cups of water.:- Even if you are not using veg, u can add upto 4 cups of water if u want the rice to be really cooked.
Tip
Jaggery burns easily. Melt it on low heat and always strain it to remove grit before adding it to the mixture.
