Malabar Kada Roast | Quail Fry | Malabar Quail Roast
The rich and spicy Malabar Kada Roast, also known as Quail Fry or Malabar Quail Roast, a dish full of character.
Ingredientsfor 4 servings
- 750 g Quail — cleaned
- 1/4 cup Curd
- 2 tbsp Kashmiri chilli powder
- 1 tbsp Cumin seed powder Jeeraka podi
- ½ tsp Garam masala powder
- 2 tbsp Ginger garlic — crushed
- 3/4 tsp Turmeric powder
- Salt, to taste
- Oil for shallow frying
Preparation
Step 1
Clean the quail and make slits on the quail meat with knife.
Step 2
Add all the ingredients except oil into a wide bowl. Stir everything together thoroughly.
Step 3
Marinate the Quail in it.
Step 4
Cook the Quail in kadai by adding ½ cup water. Put the lid on and let it go for 15 to 20 minutes on medium heat. The water should be completely dried up and the masalas should be coated on all sides of Quail.
Step 5
Heat 3-4 tbsp of oil in a pan and pan-fry all sides of quail until lightly browned.
Step 6
Quail fry is ready.
Tip
Coconut oil is not optional in a Kerala fry. It adds a flavour that no other oil can replicate.
