Tomato Ozhichu Curry
A traditional Kerala curry where tomato simmers gently in a spiced coconut gravy until every piece soaks up the flavours. The curry leaves and raw coconut oil finish add that characteristic Kerala fragrance.
Ingredientsfor 4 servings
- 1 nos Tomato diced into very small pieces, big
- 1 nos Lemon small
- 3 nos Green chillies — slit
- 1 nos Onion diced into small pieces, small
- 1/4 tsp Ginger paste
- 1/4 tsp Garlic paste
- 1/4 tsp Fenugreek powder (Uluva)
- 1/2 tsp Turmeric powder
- 4 tbsp Coconut Milk Powder dissolve powder in 1 teacup hot water and keep cup aside
- Salt, to taste
- 1/2 tsp Mustard seeds
- 2 nos Dry red chillies
- 1 nos Shallots (Kunjulli)
- Curry leaves Few leaves
Preparation
Step 1
In a small pot take diced tomato, onion, green chillies, ginger garlic pastes, turmeric powder, fenugreek powder and salt. Add 1/2 teacup(small cup) water and cook in low flame till water has almost evaporated and the curry is done.
Step 2
Add strained lemon juice to the above cooked curry.
Step 3
Switch off heat and add the dissolved coconut milk to the pan. Stir everything together thoroughly. Add 1/2 teacup hot water to the pan. Stir everything together thoroughly and add more water if required. 4)In a small seasoning pan, heat oil and break mustard seeds. Add 2 dry red chillies, 1 shallot and curry leaves.
Step 4
Add the above seasoning to the curry pot. Stir everything together thoroughly.
Step 5
Keep the curry pot on stove once again. In very low flame heat the curry for a minute till warm. Do not boil.
Step 6
Tomato ozhichu curry is ready, serve hot.
Tip
For a thicker gravy, cook uncovered on medium heat for the last few minutes. For a thinner consistency, add a splash of warm water.
