Tomato-Onion Avial
Easy and tasty dish made by cooking tomato, onion etc with coconut.
Ingredientsfor 2 servings
- 2 medium Onion preferably red
- 3 nos Tomato
- 2 nos Cubanelle peppers
- 5 - Drumsticks
- Salt, to taste
- Curry leaves
- 11/2 cup Coconut — grated
- 1 tsp Cumin seeds (Jeerakam)
- 2 tsp Red chilly powder
- 1/4 tsp Turmeric powder
Preparation
Step 1
Slice onion lengthwise. Slice tomatoes and cubanelle peppers.
Step 2
Cubanelle peppers add a nice flavour to the dish.
Step 3
Grind together coconut, cumin seeds, chilly powder and turmeric powder to a coarse paste adding little water.
Step 4
Mix all the vegetables (onion, tomato, cubanelle pepper, drumsticks) with the coconut mixture.
Step 5
Add salt and curry leaves.
Step 6
Cook in a closed vessel on a low flame till the onions are soft and all vegetables are cooked.
Step 7
Usually water from veggies is sufficient for cooking. If not add little water.
Step 8
Goes well with rice.
Tip
Do not rush the onion and shallot frying. The difference between pale onions and properly browned onions is the difference between a flat dish and a flavourful one.
