Tomato Egg Rice
an awesome and tasty rice dish with a slightly tangy flavor and flavorful aroma. Rich in nutrients and essential vitamins, the dish is an apt choice for kids as well as elders.
Ingredientsfor 4 servings
- 11/2 cup Rice cooked
- 2 nos Egg
- 1 nos Onion
- 3 Cloves Garlic
- Ginger small pc
- 1 nos Tomato
- 2 nos Green chilli
- Curry leaves, a few
- 1 tsp Chilli powder
- 1/2 tsp Turmeric powder
- 2 tbsp Oil
- Salt, to taste
Preparation
Step 1
For preparing Tomato Egg Rice, first Heat the oil in a pan and add crushed ginger and garlic, cook it, stirring for few seconds.
Step 2
Next, add sliced tomato, green chilly, onion and curry leaves.
Step 3
Put the lid on and let it go for 5 minutes or till the tomatoes become pulpy in medium flame, Give it a stir now and then.
Step 4
Open the lid and add all masala powders and salt. Let it cook for 2 minutes or till the raw smell disappears.
Step 5
Break two eggs and add it.
Step 6
Scramble the eggs and let it go for 2 minutes.
Step 7
Add the cooked rice and Stir everything together thoroughly and cook for about 2 minutes.
Step 8
Serve Tomato Egg Rice with poppadam and yoghurt.

Tip
Hard-boil the eggs first, then make shallow cuts on the surface before adding them to the gravy — this lets the masala flavour penetrate inside.
