Tindora-Kovakka With String Beans Stir Fry
Slow-roasted in coconut oil with a generous hand of spices, this beans fry develops layers of flavour as it dries out on the pan. The patience pays off — every piece is coated and concentrated.
Ingredientsfor 4 servings
- 2 cup Tindora cut length wise, Kovakka
- 2 cup Tender string beans — cut into 1 inch pieces
- 1 nos Onion — sliced
- 2 nos Green chillies slit into half
- Curry leaves, a few
- 1 nos Tomato — chopped
- 2 tbsp Oil
- 1/4 tsp Mustard seeds
- 1/4 tsp Cumin seeds (Jeerakam)
- 1/2 tsp Turmeric powder
- 1/4 cup Water
- Salt, to taste
Preparation
Step 1
For preparing tindora/kovakka with string beans stir fry, first boil the vegetables in 1/4 cup of water. Add the turmeric powder and salt while boiling. Set aside when cooked.
Step 2
Pour oil into a pan and heat it, let the mustard seeds crackle and cumin seeds.
Step 3
Cook onion and green chillies till it becomes brown in color. Then add tomato and sautT until softened.
Step 4
Add the boiled vegetables and give it a good stir.
Step 5
Add curry leaves and close the pan and Let it cook for 2 minutes.
Step 6
Tindora/kovakka with string beans stir fry, a recipe is ready.
Tip
The final handful of curry leaves should go in right at the end, off the heat — they should crackle and crisp in the residual heat.
