Tilapia Roast
Kerala-style dry fry where mixed is cooked down until all the moisture evaporates and what remains is intensely flavoured, slightly caramelised, and impossibly moreish. Best with parotta or plain rice.
Ingredientsfor 4 servings
- Tilapia 6 or 7 pieces
- Onion 2
- Tomato 1
- Ginger 1 inch piece
- Garlic 5 cloves
- Green chilly 3 numb
- Red chilly powder 3 tsp
- Turmeric powder 1 tsp
- Coriander powder 2 tsp
- Tamarind water as per taste
- Salt, to taste
- Oil, to taste
Preparation
Step 1
First marinate the fish with chilly powder,turmeric powder, salt,tamarind water.

.then keep it for half an hour.
Step 3
Then slightly fry it,no need of fry in hot oil, its to just get cooked.
Step 4
Then wipe off excess oil.
Step 5
Then heat the same pan with same oil and you can add more if you need.
Step 6
Next, add the onion, green chilly, garlic, ginger and tomato and cook it, stirring well.
Step 7
When it gets brawn add the powders to it.
Step 8
Then stir for 1 or 2 mint and then add a cup of water ton it and when it gets boiled add the fried fish to it.
Step 9
Then mix it carefully without disturbing the fish.and close the pan for about 10 to 15 mint in low flame.
Step 10
Then the roast is ready and we can take this along with rice,chapathy.
Tip
A heavy-bottomed pan or cast iron skillet gives you the best results for a proper Kerala fry. Thin pans burn the spices before the meat dries.
