White Veg Kuruma
A simple side dish that rounds out any Kerala meal. Quick to make, easy to pair, and the kind of thing that quietly makes rice and curry taste complete.
Ingredientsfor 4 servings
- 1/2 cup Beans — chopped
- 1/2 cup Carrot — chopped
- 1 nos Onion — sliced
- 2 Nos. Green Chilly — sliced
- 1/2 cup Peas Fresh
- 1 cup Coriander Leaves — chopped
- 1/2 tsp Garam Masala
- 1 tsp Pepper powder
- As needed Salt
- 1 cup Coconut — grated
- 10 Nos. Cashew nuts
- 1 cup Water
- 2 tbsp Oil
- 5 nos. Shallots — chopped
Preparation
Step 1
Heat a pan and add all veggies, garam masala, pepper powder and salt to taste. Let it cook for 10 minutes.
Step 2
Add 1 cup water and let it cook till the veggies are well cooked. It takes around 10-15 minutes.
Step 3
Grind the grated coconut and cashew nuts by adding little water to make a fine paste. Transfer the ground paste into cooked veggies and Stir everything together thoroughly, Adjust the consistency by adding hot water, adjust the salt and bring to boil. Put off the flame.
Step 4
Finally Heat the oil in a skillet and fry the chopped shallots till brown colour.
Step 5
Pour it into the curry and add chopped coriander leaves. Creamy and delicious White Veg Kurma is ready. Serve it with poori, chappathi etc.
