Thengapal Mutta Kurma
A quick and satisfying egg dish that proves you do not need expensive ingredients to eat well. Boiled eggs in a spiced gravy, or scrambled with onions and curry leaves — simple Kerala cooking at its most practical.
Ingredientsfor 3 servings
- Egg : 3 nos (beaten
- Shallots : 10 nos
- Green chillies : 2 nos
- Garlic : 4 cloves
- Ginger : 1 small piece
- Garam masala : ½ tsp
- Coconut milk : 2 cups
- Tomato : 2 nos
- Turmeric : ½ tsp
- Salt, to taste
Preparation
Step 1
First scramble the egg and set aside.
Step 2
Set a pan on the stove, heat 1 tbsp oil. Fry shallots, green chillies, garlic, ginger and garam masala.
Step 3
Grind this in to a paste.4) Heat little oil in kadai, fry tomato till soft. Add the ground paste and turmeric.
Step 4
Add salt, coconut milk and bring to boil.
Step 5
Finally add the scrambled egg and serve hot.
Tip
Hard-boil the eggs first, then make shallow cuts on the surface before adding them to the gravy — this lets the masala flavour penetrate inside.
