Tharichoru
A one-pot rice dish that brings together grains, spices, and vegetables or meat in a single satisfying meal. The rice absorbs every flavour in the pot and comes out fragrant, colourful, and complete.
Ingredientsfor 4 servings
- 1 kg Semolina Rava/Sooji
- ½ kg Meat
- ½ kg Onion
- 10 nos Green chillies
- 2 tsp Ginger
- 2 tsp Garlic
- 2 tbsp Coriander powder – 1
- 1 tsp Garam masala powder
- 1 nos Lime
- Coriander leaves A, a few
- Oil
- 1 cup Ghee
- 2 cup Water
- 2 nos Onions — for frying
Preparation
Step 1
Heat the oil in a pressure cooker.
Step 2
Add onions and sautT followed by green chillies, ginger and garlic.
Step 3
Add coriander powder and sautT well.
Step 4
Add meat and enough water.
Step 5
Pressure cook, till it is cooked.
Step 6
Add lime juice and Stir everything together thoroughly.
Step 7
Heat ghee in a pan and fry the onions. Set aside.
Step 8
Fry the semolina in it.
Step 9
Add water, coriander leaves, garam masala and fried onions and Stir everything together thoroughly.
Step 10
Lower the flame and cook for some time till done.
Tip
Soak the rice for at least 20 minutes before cooking. This ensures even cooking and prevents the grains from breaking.
