Thari Kanji
Semolina/rava is roasted in ghee to make a smooth kanji with coconut milk.
Ingredientsfor 2 servings
- 1/4 cup Semolina/Rava thari
- 2 tbsp Shallots — finely chopped (Kunjulli)
- 2 tbsp Ghee
- Salt, to taste
- 4 cup Coconut milk
Preparation
Step 1
For preparing thari kanji, heat 1 tbsp ghee and add rava to it and stir it on low heat for some time.
Step 2
Add 2 1/2 cups of coconut milk to it and cook it well.
Step 3
When the rava is cooked well, then add the remaining coconut milk and boil it well.
Step 4
Fry small onions in 1 tbsp of ghee and put it in the cooked kanji.
Step 5
Do not make the kanji too thick. It should be made like a smoothy drink.
Step 6
Thari kanji is ready. Serve for fasting people so that they can gain the energy back.
Tip
Fresh curry leaves make a genuine difference. Dried curry leaves are a poor substitute — if you cannot get fresh ones, increase the quantity and fry them longer.
