Thari Kachiyath / Thari Kanji
Thari Kanchi is a light sweetened hot drink made from milk with very little semolina and seasoned with nuts and raisins. Traditionally had while breaking the ramzan fast in the evening, it is supposed to settle the stomach.
Ingredientsfor 4 servings
- 5 tbsp Rava
- 1/2 litre Milk
- 1 cup Water
- 3 Cardamom — powdered
- 5 tbsp Sugar according to your choice
- Salt a pinch
- 1 Shallots — chopped
- 6 Each Cashew/ Raisins
- 2 tbsp Ghee
Preparation
Step 1
Roast the rava in a pan on low heat for one minute and set aside.
Step 2
Heat the milk in a saucepan along with water, salt and cardamom powder.
Step 3
When it starts to boil, add sugar and Stir everything together thoroughly. Then add the roasted rava slowly and give it a good stir, and allows to boil. Turn off the heat.
Step 4
Heat ghee in a pan, add the chopped shallots and fry it. Then fry the cashews, raisins and pour this over the prepared Kanji.
Step 5
Thari Kachiyath / Thari Kanji is ready to serve. Serve hot.
Tip
Coconut oil is the default cooking fat in Kerala kitchens. It adds a depth of flavour that other oils simply cannot match in these recipes.
